A tasty, healthy and filling way to start your day. Take two minutes the evening before to put it together, pop it in the fridge and wake up to a ready- made breakfast. Experiment with different seasonal fruits – you can also add seeds and nuts to vary the taste and texture.
4 Tablespoons chia seeds
500ml unsweetened almond milk
2 teaspoons Stevia
1 – 2 Tablespoons pure maple syrup
Put all the ingredients in a small bowl and stir well to combine. Cover and leave in bowl overnight. Will last in the fridge for 3 days.
With stewed rhubarb
Chop up a few stalks rhubarb, and cook lightly with a little water. Add a couple of spoons of Stevia to taste and keep cooking until the consistency you like.
