Almond maple chia porridge

chia seed pudding with berries in glass jarA tasty, healthy and filling way to start your day.  Take two minutes the evening before to put it together, pop it in the fridge and wake up to a ready- made breakfast.  Experiment with different seasonal fruits – you can also add seeds and nuts to vary the taste and texture.


4 Tablespoons chia seeds

500ml unsweetened almond milk

2 teaspoons Stevia

1 – 2 Tablespoons pure maple syrup 


Put all the ingredients in a small bowl and stir well to combine.  Cover and leave in bowl overnight.  Will last in the fridge for 3 days.

Serving suggestions

With stewed rhubarb

Chop up a few stalks rhubarb, and cook lightly with a little water.  Add a couple of spoons of Stevia to taste and keep cooking until the consistency you like.

With fresh fruit
