Discover the joys of kale chips!
Oh how I thought I disliked kale – its rubbery, green leaves and slightly bitter taste ... until I discovered the joys of kale chips! The way they sort of dissolve on your tongue after an initial crunchiness. You could go on eating them – and on and on. I guess it wouldn’t matter – they are only good (providing you use the good oils!)
From there I looked at other ways of using kale, especially as it is SO nutritious. It is low in kilojoules, high in fibre and contains no fat. Per kilojoule, it is higher in iron than meat (although one must allow for the fact that the iron is not absorbed as easily by the body from plant foods), high in Vit K, A and C, high in calcium and full of powerful antioxidants. WOW! Who would have thought – such an ordinary looking plant could be so good for you!
There are so many ways to include kale in your diet – eating it sautéed with almonds and dressing, adding it to soups, salads and vegie casseroles. If you haven’t already, give it a try! See recipes below for kale chips, sautéed kale with crispy bacon and avocado, banana and kale green smoothie.
